Favorite Things To Do
Breakfast is one of my favorite meals to cook for my family. Our days are packed with teaching, school, Krav Maga classes and each of our other sports and activities. We all seem to hit the hustle head on after a good breakfast. This President's Day I woke up early to get my run in and came home to a still sleeping husband and kids. I grabbed a banana and stared into the fridge for breakfast inspiration. Four eggs, some left over deer sausage and a pile of veggies later, this is what I came up with.
Poached Eggs with Potato Veggie Hash
What you will need:
A nice big cast iron frying pan and a smaller one for poaching the eggs. A couple of potatoes (I used one large sweet potato and two small Russets). Garlic, a couple cups of greens, an onion, some cooked sausage, olive oil, four eggs and your favorite hot sauce, salt, pepper and your favorite seasoning ( I like turmeric).
What to do:
Dice up the potatoes into quarter inch pieces. Chop the onion, garlic, greens and sausage into small pieces. Heat the olive oil in the large frying pan. Add the garlic and cook for about two minutes, stirring often. Add the onions and cook til they start to soften. Then add the potatoes, turmeric or other spices, and cook several minutes and stir often to brown on all sides. This can take several minutes so be patient. While the potatoes are cooking, get your poaching pan ready. Once the potatoes are soft, crack your eggs into the waiting poaching pan and then add the greens and sausage to your potato mixture and cook just until wilted and warmed through. Put a generous serving of the potatoes and veggies on a plate, top with one or two poached eggs and some shakes of hot sauce ( I like lots of hot sauce) and enjoy!
You can substitute any breakfast meat or go meatless for this dish. Have fun experimenting!
